Breakfast Potato Bites To Go Recipe

Of course these don’t have to be for breakfast only nor do they have to be to go but these are options.


  • 1 package of pre-shredded potatoes (I actually shredded the potatoes myself)
  • 3 eggs (beaten)
  • 1/2 cup shredded cheddar cheese (I left this one out)
  • 1/4 finely chopped onion
  • 1/4 teaspoon garlic powder (I used minced garlic instead of powdered)
  • salt and pepper to taste


  • Preheat oven 350°F
  • Thoroughly oil/butter a muffin pan (can be mini or regular in size)
  • Pour potatoes into a bowl
  • Stir in the salt, garlic powder and onion
  • Mix in the eggs
  • Mix in the cheese (if used)
  • Spoon into muffin tins
  • Bake 20 – 25 minutes (until golden brown and tops and edges begin to get crispy)
